Let's Bake: White Chocolate and Gingerbread Blondies!

 

I'm back with another recipe i'm trying out and it will probably be no surprise to you that it has a brownie theme. After buying special brownie trays for the oven, there really was no going back.

My boyfriend suggested that I make gingerbread brownies as I absolutely love gingerbread men when they are soft and chewy. This was a completely genius idea! I was happy to discover that Food.com had a recipe for White Chocolate and Gingerbread Blondies so naturally I got straight on it.

So the first thing that I did was measure everything out. I find that this is the most efficient way to bake - look at me getting all serious. But to be honest, I find it a lot more enjoyable and a lot less stressful if I just do all the weighing out beforehand.

 

The first stage of the recipe is to put the plain flour, baking soda and salt together in a bowl and whisk. I don't see why stirring wouldn't suffice but I whisked them regardless.

 

In another bowl I mixed the melted butter, granulated sugar, brown sugar and all the spices together until they were light brown and fluffy. I then added the eggs and one yolk one at a time until blended.

 

To the butter, sugar, spices and egg, I slowly added a teaspoon of vanilla - a little bit at a time.

 

At the same time as the vanilla, I also mixed in the molasses sugar - a little bit at a time.

 

Finally, I put the flour mixture in with the other mixture and whisked until it was combined.


I added the white chocolate chips and then scooped the mixture into my brownie trays! The whole kitchen started to smell like Christmas from all the spices! Yum :)

 

Once the mixture was in the trays I evened it out a bit before popping them in the oven for 25-30 minutes at 180 fan.


They look pretty good, even if I do say so myself. Although they'd started to smell more like popcorn at this point.

 

This was the final result. They taste really yummy but are slightly crisper than I would have liked them. If I was to do them again, which I have no doubt that I will, I would perhaps take them out a little bit earlier.
